ENVY™ Apple Tropical Shrimp SaladENVY™ Apple Tropical Shrimp Salad Serves: 6-8 as starter-appetizer or 4 as a light meal
Ingredients Choose a selection of three or four tropical fruits: watermelon, papaya, pineapple, kiwi, star fruit, mango and Envy™ apples. 2 Envy™ apples
Preparation Bring four cups of apple juice to a boil. Add uncooked shrimp and immediately turn off heat. Leave the shrimp in the hot apple juice for 30 minutes. Remove, strain and chill in your refrigerator. Peel, slice and dice your selected fruit. Remove main shells from the shrimp, leaving the tails still intact. Put the yogurt, honey, vinegar, ginger, chili flakes, lemon zest, lemon juice and salt and pepper into a blender. Blend until you have a smooth sauce. Taste and adjust by adding more salt, sugar or chili. Blend again and taste until you have a beautiful smooth, spicy, lemony flavor. Serve a selection of the fruit with the shrimp with sauce on the side or drizzled on the salad. |
