Here at ENZA we love apples. ENVY apples are no exception. People who love and work with apples know what to do with them too. In 2010 an in-house cooking competition judged by ENZA colleagues revealed the 'ENVYous Caramel Apple Swirl Cake' by Misty Johnstone in the Hawkes Bay as the 2010 ENZA staff recipe of the year. Against worthy competition (where no one's Mums were discovered to have made the cake for them) Misty's cake made it all the way to the ENVY online recipe book. Ingredients

3 ENVY™ apples - peeled, cored and diced
375 g self-rising flour
1 ½ cup sugar
1 tsp mixed spice
½ tsp nutmeg
¼ tsp salt
125 g butter, firm
3 eggs
½ cup canola oil
2 tsp vanilla
½ cup Hershey's Caramel Topping

Method

1. Pre-heat oven to 180°C. Coat the fluted baking pan using cooking spray and dust lightly with flour.
2. In a bowl combine the flour, sugar, mixed spice, nutmeg and salt. Cut butter into small pieces then add to the dry mixture.
3. In a separate bowl combine the eggs, oil and vanilla. Whisk until smooth. 4. Combine both mixtures. Add diced apples and mix thoroughly.
5. Spoon half of the mixture evenly into the prepared baking pan, and then pour the 1/2 cup of caramel over the cake mixture.
6. Spoon the remaining cake mixture evenly on top of the caramel layer.
7. Bake for 50 minutes (or until inserted skewer comes out of the cake clean).
8. Cool and remove from pan.
9. Drizzle with caramel and serve with ice cream or whipped cream.
