Apple & Watermelon Salad
ENVY™ Apple & Watermelon Salad with Goat's Cheese &
Raspberry Vincotto
(Serves 6)
Ingredients
1 cup diced water melon crisp, seeds removed
3 tablespoons mint chopped
3 ENVY™ apples, quartered, seeds removed and sliced thin
4 radishes, sliced into matchsticks
½ cup soft goat's cheese
1 cup pea shoots
sea salt flakes and cracked pepper
4 tablespoons raspberry vincotto
¼ cup extra virgin olive oil
3 tablespoons toasted pumpkin seeds
Method
Mix the melon, mint and ENVY™ apples together with the radish sticks.
Break up the goat's cheese and add with the pea shoots. Season with salt and
pepper. In a separate bowl, combine the vincotto and oil. Add some salt and mix
to combine. Add to the salad and toss together. Arrange on plates and sprinkle
with toasted pumpkin seeds. Drizzle around a little of the dressing if you have
any remaining. Serve with smoked chicken, lamb or grilled fish.
